In a move that no doubt portends our doom, scientists from the University of Missouri have come up with a substitute for chicken that apparently mimics the appearance and texture of poultry – but is actually made from soy. While I suspect that, like veggie burgers and the starch used in Buddhist Chinese cuisine to fake meat, it doesn’t actually pass a taste test, it’s a texture that’s new to the soy landscape. And it brings us one step closer to Neo’s world.
